Wow - not even a whole year later....but many roast chickens later...
Just to elaborate on the whole roast chicken thing and make it a deluxe meal. Make the recipe as before but also cut up some potatoes into pieces about 1.5 inches cubed in volume (you do NOT have to be really precise about this. Toss them in a bowl with a little olive oil, salt, pepper, herbs and pour them around the chicken when you put it in to roast. Now you've got roast chicken and roast potatoes - all you need is a salad and some wine for a sublime feast...
